Yummy Oatmeal

I am always touting the health benefits of oatmeal and always looking to create new recipes.  Here is one I that I experimented with and found to be quite tasty.  In another version I skipped the coconut and topped it with almonds.

Pineapple Oatmeal

Ingredients:

*1/2 cup milk

1/2 cup water

1/2 cup rolled oats

pinch of salt

1 cup chopped pineapple

1/4 cup craisins

1 tsp brown sugar

1/2 tsp vanilla extract

shredded coconut

Directions:

In a saucepan combine the milk, water, salt, oats and pineapple.

Turn heat to medium and stir occasionally until mixture comes almost to a boil and most of the liquid is absorbed. Turn heat down and simmer for about 10 minutes. When the oats are done, stir in brown sugar, vanilla extract and craisins. Pour the oats into bowl and top with shredded coconut.

*You can substitute soy, almond or rice milk.
