Aunt Ida Jane’s Dill Pickles
Do you have a bounty of cucumbers? Here is a quick and easy recipe for pickles.
4-6 pickling cucumbers
3/4 cup water
3/4 cup of cider or rice vinegar
1 Tablespoon of pickling salt
1 garlic clove sliced
1 small sliced red onion
10 whole peppercorns
2 teaspoons of pickling spice (or a mix of: mustard, celery, & coriander seeds and allspice)
2 fresh dill sprigs
Bring water, vinegar and salt to a boil. Scrub and cut cucumbers into slices. Add pickling spices, peppercorns, garlic, onions and fresh dill to a glass quart-canning jar. If you recycle everything like I do then feel free to use any recycled jar. Spaghetti sauce or salsa jars work great. Add cucumbers to jar and fill with hot brine. Seal with lid and put in refrigerator and let sit for at least one week.
